For tonight's meal, I wanted to go somewhat Southern. Not that I know anything at all about Southern cooking. I don't. I'm from California. My choice was meat loaf, something I've never made... believe it or not. I searched AllRecipes.com and settled on this meat loaf recipe. To go with it, I chose Whipped Potatoes (modified the recipe and left the skins on thankyouverymuch) and Collard Greens. Again, the greens are something I've never made. For dessert, I made Carrot Cake.Only real hiccup was with the greens. I misjudged the amount of time it took to prepare, so dinner was about fifteen minutes late.
I'm stuffed.

Loved the meatcake, loved the greens, loved the carrot cake, meah on the taters... Just a bit too "standard restaurant taters" for me...
Then again, i am fighting a cold so taste may have been off a bit, either way... Solid 8 overall and one of those meals that invokes memories just by smelling it.
Wonderful Meal. I love southern comfort food. Meatloaf was very good, slightly dry. Dirty Pototoes were creamy and seasoned perfectly. Collard Greens were delicious maybe should have cooked a few more minutes. Overall strong 8. A very hearty meal.

Starting with the choice of pre dinner wine!Clos Du Bois (white)Sauvignon lightly sweet!Yummy! The collards green were perfectly cooked,nicely seasoned,they were not under cooked, which is what I would of been most worried about.I liked the dirty mash potatoes very creamy and went well with the greens,the meatloaf was flavorful! The dinner wine went well with the meatloaf Robert Mondavi (Red) Merlot I have never made the distinctive connection before.I really loved the carrot cake moist and delicious! but I still think the girl (Shannon)has one up on you Awsome! Thank you very much...
